Captain
Bennett Bacon
Born: 1987
License: OUPV, USCG Masters, STCW
Languages: English
Chef/First Mate
Tara Shay Jones
Born: 1986
License: STCW
Captain Bennett grew up plying his water skills along the coast of the south eastern US. With his home port being coastal Georgia, with its wide tidal basins and salt marshes, it provided him infinite room to explore and develop his skills as a waterman. In his early days, sailing, fishing, surfing and island hoping took up most of his time but at the age of 18 he headed west for the Rockies. Attending Colorado Mountain Collage, Bennett studied outdoor leadership during the day, and spent his nights on the mountain grooming the slopes for skiers.

While the high country provided endless recreational opportunities and beautiful landscapes, his heart was always at sea. With that old sailor’s cliché in mind, moving back down to the coast to obtain his captains license and to buy and restore an old boat seemed like a “no brainer”. Eight years later he has built an outstanding reputation as a naturalist and fishing and charter guide. If he was not running his own boat on charters, he could be found working as crew onboard the University of Georgia’s Flagship research vessel, R/V Savannah. Taking scientists out to sea, and returning them home safely exposed Bennett to a wide variety of specialists studying our natural world.

Tara Shay Jones wears many hats. She grew up cooking with a family of seven on the coastal outskirts of Savannah, Georgia and truly understands the importance of a good "Sit-Down Meal". Deeply rooted in her southern ways, Tara is all about eating local and working with what the area provides. "Catch and Cook" is her specialty. Early on, cooking soul food classics sparked her passion for the culinary arts and since then, traveling the world has influenced not only her palate and her menu but also her appetite for life! Over the years, Tara has been an art curator, event coordinator and property manager, however, for the last several years has run island ecology charters alongside Ben.

While the two of them were visiting St. John in the summer they honed their skills in lobster diving and fishing in the area to provide that sea to table experience. Going out for a charter with Bennett and Tara will bring not only a naturalist perspective to your experience here in the Virgin Islands but a fun filled week of leisure activities and experiences.

The Best Laid-Back Island Attitude
We couldn’t wait to go out on charter. As luck would have it, when the day came, so did a huge nasty storm. Captain Bacon took safety into consideration and we had to cancel but they rescheduled our trip which I know isn’t always easy to do and no one can control the weather! That meant more to me than they’ll understand as this trip meant a lot to our children, especially our 7 year old. Ben and Tara were so knowledgeable and had the best laid-back island attitude that made us feel right at home. We will most definitely be chartering with them again.
Highly Recommended
Great Experience!! Tara and Bennett were very knowledgeable about the area. We had 4 teenagers with us and they loved it. I would highly recommend them, any questions you have can be answered by Bennet, he’s a walking encyclopedia of knowledge. The only problem we had is not wanting the trip to end, so when you have that impression on your clients, you’re doing something right.
Above & Beyond!
We had an absolutely amazing time on our honeymoon with Captain Bacon and Tara! Everything was spectaular - from the food and the service to the countless great memoreis we made. Ben and Tara went above &Beyond (no pun intended) to make sure we had everything we needed and more! We cannot wait to come back to Eddies In Time with Captain Bacon and Tara.
Such a Wonderful Holiday Thanks To You!
Thank you so much Captain BAcon and Tara! We had such a wonderful holdiay thanks to you! We are so spoiled by your amazing cooking, daily smoothies and great attentions! Emilio loved everything you cooked and tried so many new dishes! We would like you to visit you oneday in Georgia. We absolutely enjoyed your stories about fossil hunting, bird watching and all the adventures, skiing and surfing.
Exceeded Our Expectations
Thank you very much for our trip!! You have vastly exceeded our expectations. Not only did we visit beautiful beaches but we were amazed also by the culinary experience onboard. We have learned a lot and are thankful for it - about life at sea and southern cooking. We have had a lot of good conversations and had the opportunity to exchange a lot about our cultures, making this trip very special for us.Paris and Irene have really enjoyed the trip and your company. We hope to repeat our trip as soon as we can come back. We had so much fun on this trip! Tara and Bennet are amazing and were nothing short of kind and thoughtful. Both in and out of the water we had fun and were entertained. Thank you Bennet and Tara, you made our week!
Something We Will Never Forget!
This was truly a trip of a lifetime! Bennett and Tara were more than accommodating, taking us to beautiful quiet beaches and to fun beachside bars. The food was fabulous - everything from the coffee to snacks, to entrees, to deserts. We will definitely be recommending this to our family and friends. Feeling very blessed and thankful. Truly Tara and Bennett are the BEST! Sharon and Clay "Best trip ever! Thank you for making our trip the most amazing. You took wonderful care of us. Many Blessings!" Molly and Craig Bennett and Tara made this trip something we will never forget. They served us well and everything was delicious. We will never forget their hospitality! Thanks Bennett and Tara!"
