Captain – Etienne Quilindo (Born November 1975)
Having worked as a Marine Park Ranger, a Fly Fishing Guide in Alphonse, a Manager at the Cousin Island Special Reserve, and a PADI instructor on the Praslin and Desroches islands – not to mention a 15-year career as a skipper throughout the Seychelles – Etienne is an expert waterman in every sense of the word and has unmatched experience of the archipelago.
Our Captain has commanded many ocean vessels over the years and since 2019, has proudly lead the crew aboard Pelican. A gentle temperament, deep love for the ocean, thousands of sea miles and uncompromising integrity makes Etienne a superb Captain, and an even better human being.
Deckhand – Roddy Jules (Born January 1998)
After being awarded his Advanced Certificate in Fisheries Science and Fishing Technology at the Seychelles Maritime Academy in 2017, Roddy went on to become STCW, as well as PADI Open Water and Advanced Open Water certified.
From fishing stints near the Aldabra Atolls to working as both a deckhand and a skipper on well-known boats around the archipelago, Roddy is an invaluable member of our crew. He has in-depth knowledge of the ocean, a passion for any activity involving water and plays a pivotal role in creating once-in-a-lifetime experiences for our clients. Roddy has an incredibly light and bubbly personality and consistently impresses our guests with his close attention to service detail, hard work and professionalism on the water.
Chef – York Dunbar (Born October 1994)
Pelican’s chef, York Dunbar, graduated with a Grande Diploma from the prestigious Silwood School of Cookery in Cape Town, South Africa. Armed with the culinary knowledge of this world-class institution, he worked at various fine-dining establishments – most notably Luke Dale Roberts’ Pot Luck Club and The Test Kitchen – both synonymous with the most innovative food in South Africa.
York’s time aboard the Pelican allows him to bring a new sense of adventure to his food – thanks to fresh and exciting tropical ingredients, and the truly magnificent environment in which he gets to cook them. Passionate about sustainability, York loves building relationships with local farmers and producers on the islands to ensure only the very best seasonal ingredients. Exploring the fusion of different cultures and cuisines, York’s refined take on farm-to-table cooking has all the excitement of unknown flavours, whilst simultaneously making you feel wonderfully at home.
