Chester and Jen are eager to welcome you aboard! Their passion for Nature’s’ Little Secrets, this life and the beautiful ocean is infectious. If you can enjoy some sailing, water activities, beach time and incredible food cooked with love all at the same time, then they have achieved their other passion in life, which is to look after you and give you the vacation of a lifetime. They have a wonderful story between them that they will share with you and invite you to be a part of, here in these magical islands.

Chester prides himself in his ability to devise the perfect trip that you are looking for and no trip will ever be the same. Your safety is paramount to him and making you smile each day during your stay with his fun and happy personality, there is nothing he will not aim to do for you to ensure you are well cared for. Jen will welcome you each morning with a big smile and will be most at home in the galley making sure she can surprise you with her menu. Her passion is not only to cook food - it’s eating it and so taste and flavour is what she is aiming for as well as her food being pleasing to the eye.

Her speciality is catering for any dietary requirements and truly cooking with her heart. She also loves clean eating for health and wellness and is interested in plant based foods and bringing them into the forefront of delicious cuisine. She truly believes that we are what we eat and so we should eat the best! Her motto is that “healthy food should be beautiful, fresh, colourful and taste decadent because when you eat you feed your body and your soul”.

 

Sample Menu

BREAKFAST:

  • Coconut Bircher Muesli with Apple match-sticks, sliced almonds and coconut youghurt
  • Avocado toats with pumpkin seeds, micro herbs and a poached egg
  • Fresh Papaya fruit bowls filled with Greek yoghurt, tropical fruits and crunchy granolo, topped with local raw honey
  • Vanilla & cinnamon French toats with fresh blackberries and a honeyed ricotta
  • Chia parfait with tropical fruits
  • Bacon & Swiss cheese pastries with asparagus spears and a balsamic reduction with fresh shaved parmesan

 LUNCH:

  • Seared diver caught scallops with a pesto pea puree and lemon beurre blanc topped with crispy bacon & lemon served with freshly baked focaccia
  • Hickory smoked shrimp tacos with a lime & cilantro coleslaw
  • Chicken Caesar salad with crispy friend egg and an anchovy & caper dressing topped with fresh shaved parmesan, served with fresh baguettes
  • Tuna/Swordfish Nicoise with soft boiled eggs and olive tapenade 
  • Quiche with panzanella salad

 DAILY TREATS:

DINNER:

  • Pan seared cinnamon spiced Mahi Mahi with lime butter, barley and a mango and black bean salsa with fresh local chives
  • Sous Vide Beef tenderloin, sea salt roasted asparagus & cherry tomatoes with a garlic compound butter
  • Chicken encroute of smoked ham, swiss cheese & filo pastry, with potato puree, blanched green beans and a lemon & tarragon butter
  • Sous Vide fillet of Sea Bass atop a butternut puree, with white quinoa and an apple & parsley salsa
  • Chickpea & squash Thai curry with brown rice, fresh spinach, coconut, almonds and Won Ton crips

DESSERTS:

  • Chocolate fondant with vanilla mascarpone & hazelnut praline
  • Lemon semifredo with lemonhoney caramel and a lemon crumb
  • Fresh mango fool with shortbread and mango puree and dark chocolate tuille
  • Bakes pears with a salted caramel and warm amaretto sabayon
  • Individual key lime meringue tarts with a lime gel and dark chocolate foam
