Simone Niemann | Chef
While working onboard M/Y Only Now as a temporary Stewardess and Crew Chef, she gained extensive hands-on knowledge of yacht operations and developed a deep understanding of the high standards required in the yachting industry. Her experience in these roles provided her with a strong foundation in both housekeeping and food service, enabling her to work efficiently, professionally, and with exceptional attention to detail. She also has a genuine passion for culinary arts. Fascinated by diverse flavours, cooking techniques,
and global food cultures, she enjoys experimenting with new recipes and creative culinary ideas. Another of her strengths is event planning and elegant table décor—she often took the lead in organising family and friends’ celebrations, birthday parties, holiday gatherings, and special events.

Christian Olsen | Engineer
Meet Chris, our dynamic Danish engineer, whose passion for engines ignited at a tender age. From his first ATV at 4 years old, to 8 years as a certified welder and steelworker, Chris then pursued a Bachelor's in Technology Management and Marine Engineering. Originally eyeing project management, fate led him to the enchanting world of yachting. Chris' engineering prowess has graced everything from motorbikes to high-performance cars, explorer yachts, classic marvels, and pristine white vessels.

Maggie Beylevld | Chief Stewardess
Maggie, your Chief Stewardess onboard, brings with her a decade of valuable experience in the service industry. With a global work history spanning countries such as Saudi Arabia, America, South Africa, and Italy, she has honed her skills in interacting with diverse cultures and people. Growing up by the ocean, Maggie developed a profound love for all things water-related. Her upbringing, with a Captain as her father, naturally steered her towards her current profession. Maggie is a positive, outgoing individual with an innate curiosity for solving puzzles, whether they are physical challenges or figurative problems. Her cheerful demeanour and eagerness to engage with guests ensure that service with a smile is always guaranteed.

Matachley Salmon | Stewardess
Matachley joins ONLY NOW as Second Stewardess with a strong foundation in both private and charter yachting, combined with a dynamic, can-do attitude and a natural flair for guest service.

Having stepped straight into a Sole Stewardess role early in her career, Matachley quickly developed independence, resilience, and exceptional problem-solving skills. Her experience onboard M/Y Wyldecrest saw her confidently managing all interior operations—from housekeeping and laundry to guest service, provisioning, and inventory control—while also supporting deck operations when required.

Matachley is highly detail-oriented and thrives in fast-paced charter environments, where her proactive approach ensures guests’ needs are anticipated before they are expressed. She has a particular strength in creating a warm, welcoming atmosphere onboard, combining polished service with genuine personality.

Her background in event coordination and hospitality further enhances her ability to deliver seamless guest experiences, from curated table settings to smooth service flow and memorable onboard moments.

Fluent in English and Afrikaans, Matachley brings excellent communication skills, a strong work ethic, and a collaborative team spirit to the interior team. Organized, creative, and highly adaptable, she is a valuable asset onboard ONLY NOW, contributing to a refined yet relaxed charter experience.
