Hailing from a small seafaring village on the rugged west coast of Ireland, Captain Noah was practically born with salt in his veins. From the moment he first stepped aboard a boat at the age of five, he knew he was destined to become a captain. The sea has been at the heart of his life ever since.

Growing up, Noah was a competitive sailor, racing across multiple classes at both national and international levels. When he wasn’t competing, he dedicated his time to instructing and coaching at his local sailing club in Rosses Point—passing on his knowledge and passion to the next generation of sailors.

Four years ago, Noah transitioned into the world of yacht chartering and hasn’t looked back. He has captained and managed flotillas of 10 to 20 boats in Croatia and Greece, serving not just as a skipper but as a Route Manager overseeing logistics and guest experiences. Now based in the US Virgin Islands and BVI, Noah brings his professionalism, enthusiasm, and sharp attention to detail to every charter—ensuring guests experience the very best the Caribbean has to offer.

When he’s not sailing, Noah can still be found on the water—whether it’s surfing, kitesurfing, or casting a line for the catch of the day. And true to his Irish roots, he’s never without a good story or two to share. With Noah at the helm, guests can expect an unforgettable voyage filled with adventure, laughter, and a touch of Irish charm.




Chef Steph
Hailing from Sweden’s picturesque west coast, Chef Steph grew up surrounded by the sea and spent her summers sailing aboard her family’s small boat. From a young age, she knew she was destined for a life on the water. Her passion for food began in childhood, nurtured by hours in the kitchen alongside her father—moments that sparked a lasting appreciation for meals crafted with love, flavor, and intention.

Steph’s culinary style is guided by seasonality and the bounty of nature. She prioritizes fresh, locally sourced ingredients and is inspired by what’s available in the moment—always honoring the simplicity and vibrancy of natural produce. With a diploma in gastronomy and nutrition, as well as several cooking courses under her belt, she is committed to creating light, healthy, and flavorful meals that nourish both body and soul.

For Steph, cooking is a lifelong journey of creativity and curiosity. She brings this same passion and openness to every charter, continually expanding her knowledge and striving to deliver meals that are not only delicious but deeply satisfying.

Outside the galley, Steph lives an active and well-balanced life. She enjoys outdoor adventures, exercising, traveling, and spending time with family and friends. Her approach to life—like her food—is rooted in creativity, connection, and well-being, making every dining experience she creates both joyful and memorable.

My name is Connor and I am 12 years old, and this was honestly one of the best weeks of my life! Our trip on the catamaran with Captain Noah and Chef Stef through the British Virgin Islands was absolutely incredible from start to finish. We spent a whole week sailing around and visiting so many beautiful islands throughout the BVI — each one was unique and amazing in its own way. There was always something new and exciting to explore! First of all, Chef Stef’s food was out of this world! The breakfast was so delicious — definitely one of my favorite meals ever throughout the whole week. And don’t even get me started on the dessert… I could have eaten it all day! Everything tasted amazing, and it was cool to see how Chef Stef prepared such great food right there on the boat every single day. Captain Noah did an awesome job navigating us to all the best spots across the islands. My absolute favorite place we visited was Turtle Bay — what an incredible spot! I got to go snorkeling there and it was so cool seeing all the sea life underwater. I didn’t want to get back on the boat! The whole crew made sure we had the best time and made everyone feel welcome all week long. As a 12-year-old, I was a little nervous at first being out on the open water, but Captain Noah made everything feel safe and fun every single day. If you’re thinking about booking this trip — do it! Our group of 8 loved the trip. Our favorites were Little Harbor @ Peter Island, snorkeling, hiking, chasing turtles, paddle boarding in circles. We deemed our trip the Best 3 hour Tour in the biz. We LOVED Steph’s food. Several of us really enjoy cooking and she went above and beyond to spoil us tremendously. Another several of us are boaters and took advantage of sitting at the helm with Noah and gleaning all his knowledge. EPIC The trip of a lifetime! We were told at the beginning that this experience would be lifechanging, and no doubt it was. From Captain Noah’s guidance and insider tips to master navigation and daily siting, he led us through ever-changing immersions in paradise. “Turtle Bay” was a big highlight, and we loved spending some time hiking among giant hermit crabs and ruins here, as well as SUP and snorkeling with the turtles, rays, and conch. We wove between quiet, still spots and bustling bays and loved everywhere Noah led us. The entire time we were fueled by Chef Stephanie’s healthy and creative meals that elicited “Wow’s”, “Incredible!” and even a “Oh my god!” from the youngest (12) in our group! She skillfully met everyone’s dietary needs and truly fed us the most delicious meals that could be found in any fine dining restaurant. We highly recommend “full board” and taking all the meals one can from this exceptionally gifted chef. This trip gets all the stars we could give. ♡ ~Hucks

5 ✴ Until we meet again! :) Cheers to Steph & Noah for making it so extraordinary. This was our annual girls trip. There are 6 of us that have traveled extensively together. First time on a boat for a week — & will not be the last! From the moment we stepped aboard, we felt like VIPs. Chef Stephanie truly went above & beyond; every meal was beautifully presented, thoughtfully curated, & beyond delicious. She didn’t just cook for us, she spoiled us. Cap Noah made the entire journey feel effortless & special. We felt completely safe the entire time while he guided us to stunning spots & hidden gems that made the trip feel exclusive & magical. The perfect balance of fun & relaxation. Questionable dance moves, themed outfits that got progressively more unhinged as the days went on. Through it all, Steph & Noah never flinched. Hasselbring’s adrift This is hands down the best family vacation we have ever been on. Noah and Steph went above and beyond to take care of us and make our trip memorable! When we video called before the trip to talk about what we wanted for adventure, Noah gave us exactly what we wanted. Steph also took note of our food likes and dislikes and presented us with the most amazing meals every single meal. They both exceeded our expectations, were so friendly and fun, my kids don’t want to leave. We feel blessed to have been able to spend our vacation with Noah and Steph. We had the trip of a lifetime here in the BVI. The weather was spectacular, the views unbelievable, and the hospitality top notch. We enjoyed the beautiful beaches, swimming off the boat, and walking through the Baths. We also saw beautiful fish, birds, flamingos, and goats. We came on our trip to the BVI to celebrate our 28th anniversary, graduations from graduate school, and Christmas / New Year’s. Our week together represents the best time and the best family vacation to date. As a family of six (our son just married, Caitlyn), our goal was to be together without being in a hurry to leave. Our favorite memories are: Sea turtles at Peter Island (Sea Sward, etc.) Norman Island – snorkeling, fish Baths at Virgin Gorda were beautiful Day at Jost Van Dyke when we watched the full moon rise Beaches were great Private beach at Guana was terrific Sandy Spit & Jost Van Dyke bubbly pool The food this week has been the best food we’ve ever had. Hailing from a small seafaring village on the rugged west coast of Ireland, Captain Noah was practically born with salt in his veins. From the moment he first stepped aboard a boat at the age of five, he knew he was destined to become a captain. The sea has been at the heart of his life ever since.

Growing up, Noah was a competitive sailor, racing across multiple classes at both national and international levels. When he wasn’t competing, he dedicated his time to instructing and coaching at his local sailing club in Rosses Point—passing on his knowledge and passion to the next generation of sailors.

Four years ago, Noah transitioned into the world of yacht chartering and hasn’t looked back. He has captained and managed flotillas of 10 to 20 boats in Croatia and Greece, serving not just as a skipper but as a Route Manager overseeing logistics and guest experiences. Now based in the US Virgin Islands and BVI, Noah brings his professionalism, enthusiasm, and sharp attention to detail to every charter—ensuring guests experience the very best the Caribbean has to offer.

When he’s not sailing, Noah can still be found on the water—whether it’s surfing, kitesurfing, or casting a line for the catch of the day. And true to his Irish roots, he’s never without a good story or two to share. With Noah at the helm, guests can expect an unforgettable voyage filled with adventure, laughter, and a touch of Irish charm.




Chef Steph
Hailing from Sweden’s picturesque west coast, Chef Steph grew up surrounded by the sea and spent her summers sailing aboard her family’s small boat. From a young age, she knew she was destined for a life on the water. Her passion for food began in childhood, nurtured by hours in the kitchen alongside her father—moments that sparked a lasting appreciation for meals crafted with love, flavor, and intention.

Steph’s culinary style is guided by seasonality and the bounty of nature. She prioritizes fresh, locally sourced ingredients and is inspired by what’s available in the moment—always honoring the simplicity and vibrancy of natural produce. With a diploma in gastronomy and nutrition, as well as several cooking courses under her belt, she is committed to creating light, healthy, and flavorful meals that nourish both body and soul.

For Steph, cooking is a lifelong journey of creativity and curiosity. She brings this same passion and openness to every charter, continually expanding her knowledge and striving to deliver meals that are not only delicious but deeply satisfying.

Outside the galley, Steph lives an active and well-balanced life. She enjoys outdoor adventures, exercising, traveling, and spending time with family and friends. Her approach to life—like her food—is rooted in creativity, connection, and well-being, making every dining experience she creates both joyful and memorable.

My name is Connor and I am 12 years old, and this was honestly one of the best weeks of my life! Our trip on the catamaran with Captain Noah and Chef Stef through the British Virgin Islands was absolutely incredible from start to finish. We spent a whole week sailing around and visiting so many beautiful islands throughout the BVI — each one was unique and amazing in its own way. There was always something new and exciting to explore! First of all, Chef Stef’s food was out of this world! The breakfast was so delicious — definitely one of my favorite meals ever throughout the whole week. And don’t even get me started on the dessert… I could have eaten it all day! Everything tasted amazing, and it was cool to see how Chef Stef prepared such great food right there on the boat every single day. Captain Noah did an awesome job navigating us to all the best spots across the islands. My absolute favorite place we visited was Turtle Bay — what an incredible spot! I got to go snorkeling there and it was so cool seeing all the sea life underwater. I didn’t want to get back on the boat! The whole crew made sure we had the best time and made everyone feel welcome all week long. As a 12-year-old, I was a little nervous at first being out on the open water, but Captain Noah made everything feel safe and fun every single day. If you’re thinking about booking this trip — do it! Our group of 8 loved the trip. Our favorites were Little Harbor @ Peter Island, snorkeling, hiking, chasing turtles, paddle boarding in circles. We deemed our trip the Best 3 hour Tour in the biz. We LOVED Steph’s food. Several of us really enjoy cooking and she went above and beyond to spoil us tremendously. Another several of us are boaters and took advantage of sitting at the helm with Noah and gleaning all his knowledge. EPIC The trip of a lifetime! We were told at the beginning that this experience would be lifechanging, and no doubt it was. From Captain Noah’s guidance and insider tips to master navigation and daily siting, he led us through ever-changing immersions in paradise. “Turtle Bay” was a big highlight, and we loved spending some time hiking among giant hermit crabs and ruins here, as well as SUP and snorkeling with the turtles, rays, and conch. We wove between quiet, still spots and bustling bays and loved everywhere Noah led us. The entire time we were fueled by Chef Stephanie’s healthy and creative meals that elicited “Wow’s”, “Incredible!” and even a “Oh my god!” from the youngest (12) in our group! She skillfully met everyone’s dietary needs and truly fed us the most delicious meals that could be found in any fine dining restaurant. We highly recommend “full board” and taking all the meals one can from this exceptionally gifted chef. This trip gets all the stars we could give. ♡ ~Hucks

5 ✴ Until we meet again! :) Cheers to Steph & Noah for making it so extraordinary. This was our annual girls trip. There are 6 of us that have traveled extensively together. First time on a boat for a week — & will not be the last! From the moment we stepped aboard, we felt like VIPs. Chef Stephanie truly went above & beyond; every meal was beautifully presented, thoughtfully curated, & beyond delicious. She didn’t just cook for us, she spoiled us. Cap Noah made the entire journey feel effortless & special. We felt completely safe the entire time while he guided us to stunning spots & hidden gems that made the trip feel exclusive & magical. The perfect balance of fun & relaxation. Questionable dance moves, themed outfits that got progressively more unhinged as the days went on. Through it all, Steph & Noah never flinched. Hasselbring’s adrift This is hands down the best family vacation we have ever been on. Noah and Steph went above and beyond to take care of us and make our trip memorable! When we video called before the trip to talk about what we wanted for adventure, Noah gave us exactly what we wanted. Steph also took note of our food likes and dislikes and presented us with the most amazing meals every single meal. They both exceeded our expectations, were so friendly and fun, my kids don’t want to leave. We feel blessed to have been able to spend our vacation with Noah and Steph. We had the trip of a lifetime here in the BVI. The weather was spectacular, the views unbelievable, and the hospitality top notch. We enjoyed the beautiful beaches, swimming off the boat, and walking through the Baths. We also saw beautiful fish, birds, flamingos, and goats. It has been a wonderful and relaxing five days and we can’t wait to do it again. Thank you to Noah for your great recommendations and keeping us safe. We came on our trip to the BVI to celebrate our 28th anniversary, graduations from graduate school, and Christmas / New Year’s. Our week together represents the best time and the best family vacation to date. As a family of six (our son just married, Caitlyn), our goal was to be together without being in a hurry to leave. Our favorite memories are: Sea turtles at Peter Island (Sea Sward, etc.) Norman Island – snorkeling, fish Baths at Virgin Gorda were beautiful Day at Jost Van Dyke when we watched the full moon rise Beaches were great Private beach at Guana was terrific Sandy Spit & Jost Van Dyke bubbly pool The food this week has been the best food we’ve ever had. Consistently healthy, well prepared, well presented. We appreciate Chef Stephanie’s diligence and effort. Her love for preparing & serving others is clear.
